Beer-Battered Onion Rings

Ingredients
2 lbs sweet yellow onions
1 egg
1 1/2 cups lager or wheat beer, room temperature
1 1/2 cups flour
2 tsp cornstarch
1/2 tsp salt
1/2 tsp black pepper
vegetable oil, for frying
Directions
- Peel onions; cut into large thick slices. Separate the rings. In large stockpot, heat oil to 375° F. In a large bowl, beat egg. Stir in the beer. Add flour, cornstarch, salt and pepper; whisk to combine.
- Working in batches, dip onions into batter. Let excess batter drip off; place in oil. Fry a few onions at a time for about 2 minutes or until golden-brown on each side. Remove to paper towel-lined baking sheet. Repeat with remaining onions. Keep warm in a 250° F oven. Sprinkle with salt before serving.
